I agree, inflation is a mechanic that is necessary against snow-balling, but building a new resource building should never be negative for your income. I always imagined Orthanc Guards with spears. But I don't have anything against them with swords.

I like the mill. It fits really well.
What about a farm with animals instead of crops.
An orchard with Apple or other trees.
What about miner camp?
Forge is ok, but it isn't really a building that should be build everywhere.

Maybe they first have to reach level 2 by killing enough enemies. So you can sacrifice one of your hordes to feed a lair close to your enemy.

I doubt that a switch between different building styles is possible because those are far too different and affect far too many things.

But I like the other options for user descisions and game customazing.
